I love this recipe for its convenience and customization. Eating healthy on a budget without growing tired of the same foods can be challenging! This power bowl satisfies both my stomach and my wallet! Select one or two of your favorite grains such as corn, sweet potato, or in my case brown rice, some of your favorite veggies such as edamame and zucchini, your choice of protein (I picked tofu for this recipe), and Gourmet Hemp Foods Hemp Hottie Sauce! I love using their hemp based sauces to help balance my protein intake when I don’t feel like eating a lot of meat or I’m cooking vegetarian or vegan options with friends. Not to mention, the five pepper combination ties together all parts of this bowl into one healthy, affordable, and flavorful meal!
Chef Tip: Throw all your veggies on a baking sheet in the oven at 450 with olive oil, salt, and pepper to make a quick and easy power bowl instead of preparing each vegetable and protein separately! If you’re feeling extra fancy, add your favorite spices for a more complex flavor!
*Makes 2 bowls
Cook brown rice in a rice cooker or on a stovetop with about 3⁄4 cup and 2 tablespoons of water. Once rice is fluffy and has absorbed all water, set aside.
Meanwhile, cut broccoli into medium chunks and bake in the oven at 450 degrees with olive oil, salt, and pepper for about 20 minutes until cooked through and crispy on the edges. Add chopped zucchini and tofu halfway through baking.
Layer two bowls with brown rice, broccoli, zucchini, and tofu. Add the edamame and white beans next. Top with Hemp Hottie Sauce and enjoy.
