Vegan Hemp Honey BBQ Jackfruit Sliders

Jackfruit has a distinctive sweet and fruity aroma. The edible pulp is 74% water, 23% carbohydrates, 2% protein, and 1% fat. Ingredients

  • 2 Cans of Jackfruit (in brine or water)
  • Olive oil | 1 tablespoon
  • 1/2 yellow onion | sliced
  • Minced garlic | 3 cloves
  • Chili powder | 1 teaspoon
  • Paprika | 1 teaspoon
  • Cumin | 1 teaspoon
  • Liquid Smoke | 1 tablespoon
  • Salt | To taste
  • Pepper | to taste
  • Vegetable Stock | 1 1/2- 2 cups
  • Hemp Honey BBQ Sauce | To taste
  • Red onion, sliced, to serve
  • Tomato, sliced, to serve
  • Lettuce, to serve
  • Dinner Rolls, to serve

Preparation

  1. Preheat oven to 400 degrees Fahrenheit
  2. Drain and rinse jackfruit, cut into smaller pieces and remove core
  3. Add olive oil, onions, garlic, salt, and pepper to the pan/skillet over medium heat. Sauté until onions become tender and translucent.
  4. Add jackfruit, chili powder, paprika, cumin, liquid smoke and stir.
  5. Add vegetable stock and let simmer until vegetable stock is mostly absorbed by jackfruit and is soft enough to be mashed.
  6. Mash jackfruit until it appears pulled/shredded.
  7. Spread an even layer of pulled jackfruit across a lightly oiled baking sheet.
  8. Bake for 25 minutes.
  9. Remove from oven and pour the Hemp Honey BBQ Sauce on jackfruit and stir to combine.
  10. Place back in oven for 10 more minutes
  11. Build your slider, top with desired dressings.
  12. Enjoy!
